COVID-19

Hello Everyone!

Its been too long. I’m sorry! I have been swamped in the last month with so much school work and also having COVID. I thought I would share my experience of it!

I do want to first begin by saying that I believe I am very lucky to have only had the symptoms I did and I completely appreciate there are some who are not as lucky and so this is simply my experience and I can’t speak for everyone.

I began having symptoms at school on the Monday morning, and I had a really sore and swollen throat, and it developed into what I thought was a cold by Tuesday. I really didn’t think anything of it as we had been told covid was a dry cough, which I did not have, nor a temperature etc. It was Tuesday afternoon that we were pulled out of lessons to be told that a girl in our bubble had tested positive and we all had to isolate for 2 weeks. It was this point my a couple of my friends and I thought we should mention the symptoms we were having and we were assured we didn’t have it but they would test us anyway, incase. The sent our tests away that night and we were told we would get the results in a day.

Let’s just say we didn’t get them in day. By the time we got them on Saturday afternoon, and I tested positive, I had been through the worst of my symptoms. I felt extreme fatigue, a really sore throat and very painful headaches and although I never had a temperature, I had hot flushes yet would shiver almost all the time. Because I am dumb instead of resting like others, I was determined to not fall behind on schoolwork and online school. This is my opinion in why it took me so long to recover fully. For a few weeks after I was no longer contagious I still shivered when I wasn’t cold and had headaches that were really painful. I did also find that my recovery in sport took much longer, as in after becoming breathless it would take much longer to slow my breathing.

Overall, I am aware I was very lucky to get off lightly, but it still wasn’t fun. If anyone has any questions then I would be happy to answer them! I will be getting back to some school style posts on my a levels now that I am settling in.

Lots of love,

Lara xx

Chicken and Broccoli Pasta

Hello Everyone!

Today I am uploading a video! Sadly, because of the format of this blog, it can’t be posted here! I will instead be listing the the method here and have my video on the instagram! (@_larakennedy_)

I based it on a TWISTED recipe, except I’ve changed a few ingredients. I used one small head of broccoli, which I cut into smaller pieces, two large chicken breasts and 500g of pasta. I made a chicken mix from 1 tsp of salt, ground pepper, onion powder, oregano and 1/2 tsp of cayenne. I butterflied the chicken and coated it in the mix, then frying it in 2 tbsp of butter. Once cooked, I put 2 cloves of garlic into the wok that I fried the chicken in, then 300ml of double cream, 1 tsp of oregano and 2 tbsp of finely chopped parsley. Once the cream starts to thicken and bubble, I added the chopped chicken, pasta and broccoli.

I hope you like this recipe and if you make it I would love to know so leave a comment!

Lots of love,

Lara xx

Path to Tomorrow

Hello Everyone!

I hope you all don’t mind, but I have a lot of photos coming from a walk I took a couple of weeks ago. There were just so many picturesque views and as they say practice makes perfect, so I’m taking lots of photos in the hopes of improving.

I am not going to get ahead of myself, but with school starting soon, I am trying to take the days as they come and enjoy the ride as much as possible. This sounds dramatic I know, but it isn’t the easiest thing for me, and so I am doing what I can to stay positive. Thank you in advance for bearing with me, and maybe sometime I will post about it, but for now I thank you for simply reading, because even when I am not great or the posts are boring, and inevitably I will do it again, people still read, so thank you.

Lots of love,

Lara xx
